Easy to understand explanations of why cooking without grain is a more healthy alternative to traditional ingredients. The recipes are easy to understand, organized well, and beautifully photographed.  I was very please with the variety of recipes in this Paleo cookbook.  As previously stated, most of the recipes are of common meals remade to be grain free.  The book has a good variety of breads that I am in the process of trying (to some degree of success!)  Breads are the toughest for me to give up!  The several that I have already tried were beyond delicious.  Do yourself a favor and go for a grain free and healthier lifestyle; let this cookbook be a good start.\

    This is a great cookbook for those making the transition to a Paleo lifestyle.  While the author does offer a 4 week menu plan, this isn’t a diet book.  She just offers recipes of tasty food that follows the Paleo lifestyle and encourages clean, processed-free eating.  I like many things about this cookbook including way it is organized, the mouthwatering photographs of the finished meal, and the meal plans and shopping lists to make your transition to the Paleo lifestyle easier.  Amy also has an extensive section on herbs and spices that I found very enlightening.   I think this is a perfect cookbook for Paleo novices and their families. The recipes are appetizing and aren’t too “out there”, which is great when cooking for kids or non-Paleo eating spouses.  Yet it also has recipes that even the seasoned Paleo cook will find refreshing.  It is a must-have for your cookbook collection!

      I have been reading a lot in the news about eating organic, juicing, etc.. My doctor even mentioned “eating raw,” that last time I was at his office.           Fried Egg & Butternut Squash Hash

          This is a delicious breakfast meal….or try it for supper!  If you are like me and love eggs, you will find this tasty any time of the day!  I can hardly believe that this is one of my favorite quick meals.  Just a few short months ago, I would even have THOUGHT of eating butternut squash.  If my taste buds can change, there is hope for you too!


          Hash Recipe
          Preheat oven to 400 degrees
          2 cups butternut squashed, skinned & cubed
          1/2 cup sweet peppers, diced
          1/2 cup onion, diced
          1 TB Olive Oil
          Salt & Pepper to taste
          1 tsp. basil

          Toss all ingredients together in a bowl and spread on baking sheet.
          Roast in oven for half hour or until cooked through, crispy, and carmelized

          Fry egg and place on top of has and enjoy!

            Classic Gluten-Free Bread

            While I am not totally convinced I should be eating gluten-free, I have found a fantastic recipe for gluten-free bread that bakes firm and cuts really nice. This recipe gives me an alternative to wheat bread that is healthy and not using heavily processed flours.  While the dough is more of a batter, once baked it makes a loaf perfect for sandwiches.


            First I make my own batch of All-Purpose Gluten-Free Flour blend.  This stores well in an air tight container or in ziplock bags in the freezer.



            4 cups stone ground white rice flour
            2 cups stone-ground brown rice flour
            2 cups tapioca flour or tapioca starch
            1 cup potato starch (NOT potato flour)

            Combine all flours in a large container and use a wire whisk to thoroughly blend all flours.
            Store in an airtight container for up to a month or in the freezer for up to six months.

            * Stir lightly before measuring for a recipe.

            Recipe for Classic Gluten-Free Bread

            2-1/2 cups Gluten-Free All-Purpose Flour (see above)2 TB dry milk powder
            1 TB instant (quick-rising) active dry yeast
            1 tsp. xanthan gum *
            1-1/4 cups milk (2% works fine)
            1 TB sugar or honey (date sugar, coconut sugar, raw honey, etc.)
            2 TB butter, cut into large pieces (or 2 Tb. olive oil)
            1 tsp. salt
            3 large eggs

            *xanthum can be purchased online at

            1.  Grease a 4-1/2 x8-1/2 loaf pan with non-stick cooking spray.  Position oven rack to the
            middle of the oven.

            2.  Measure 1 cup of flour, milk powder yeast and xanthan gum into a bowl and blend together with a wire whisk and set aside.

            3.  In a small saucepan combine milk, sugar, butter, and salt.  Heat over a medium heat, stirring constantly, just until sugar dissolves and butter is melted and the mixture reads between 120°F and 130°F on an thermometer.

            4.  Add the milk mixture to the flour mixture, then add eggs.

            5.  Using an electric mixer or bread hook, beat the mixture for 2 minutes and scrape sides.  Slowly add the remaining 1-1/2 cups of flour and continue to beat until a batter is formed.  If too soft, add more flour until batter is stiff.

            6.  Spoon dough into prepared pan.  Gently smooth the top of dough using the back of a light greased spoon.  Let the bread rise in a warm place for 50-60 minutes until the crown of the loaf rises just above the top of the pan.

            7.  Preheat the oven to 375°F.  Put bread into oven and bake 10 minutes.  Cover top with foil to keep from over browning.

            8.  Bake bread until golden brown and thermometer reads 210°F at the center of the loaf (40-50 minutes longer).

            9.  Remove bread from pan and put back in oven directly on rack for 5 minutes to brown the sides.  Remove from oven and place on wire rack to cool.  Slice thin and use for sandwiches, toast, or just eat plain.  Soooo tasty!

            *** Feel free to spice up the loaf using a variety of different flavorings, herbs, nuts seeds,
            or cheese.

                Cauliflower Rice

                When I first read about cauliflower rice, I was not at all convinced.  I mean fake rice is bad enough, but a rice substitute made of CAULIFLOWER?  I decided I would try it and now I am a believer!  While it doesn’t taste like rice, it does look like it and give you the illusion that you are eating rice!  With that said, I found it to be tasty in it’s own right.  I really did like it and do use it when I would normally eat rice.  See the recipe below that I got from  Visit that site for a great video on making it as well.

                • 1 head organic cauliflower
                • 1 Tablespoon coconut oil
                • Salt and pepper
                1. Wash cauliflower, discard the leaves, and chop into small pieces. Grate the pieces with a food processor.
                2. In a large skillet heat the coconut oil over medium. Add the shredded cauliflower. Saute for about 5 minutes, until tender. Season with salt and pepper. Serve as you would traditional rice.

                  Crockpot Beef Barley Soup

                  ½ lb lean ground beef (225 g)
                  1 large onion, chopped
                  1 tbsp oil (15 ml)
                  1 16 oz bag of shredded coleslaw mix (about 8.5 cups) (454 g)
                  1 14 oz can diced tomatoes (398 ml)
                  1 cup frozen mixed vegetables (250 ml)
                  1 10 oz can beef broth (284 ml)
                  6 cups water (1.5 L)
                  ½ cup pearl barley (125 ml)
                  1 bay leaf
                  1 tsp dried whole oregano (5 ml)
                  1 tbsp beef bouillon powder (15 ml)

                  Brown ground beef & onion.  Drain off any fat.  Put into crock pot.
                  Add rest of ingredients & mix.  Cover & cook on low for 6 or 7 hours
                  (or on high for 3 to 3.5 hours).  Makes 12 - 13 cups of soup.

                  This soup is thick & hearty - makes a great supper served with
                  salad & buns.

                    Anytime Egg Fajitas

                    2 tablespoons cold-pressed oil of choice

                    2 cups shredded potatoes

                    1/2 pound chicken sausage, casings removed

                    5 eggs

                    1/2 cup green bell pepper, chopped

                    1/4 onion, chopped

                    1 cup cheddar cheese, shredded

                    8 large whole wheat flour tortillas

                    Heat oil in a large skillet.  Add shredded potatoes and cook over medium heat, stirring constantly until lightly browned.  Add sausage and stir frequently until sausage is thoroughly cooked.  Beat eggs in a small bowl and add to hash brown mixture along with green pepper and onion.  Cook, stirring occasionally, until eggs are set and thoroughly cooked.  Microwave tortillas on high for 25 – 30 seconds to soften.  Spoon egg mixture onto center of softened tortillas and top with cheese.  Roll up tortillas.
